For breakfast and beyond, these gluten free, vegan, chocolate covered coconut snowballs are the perfect guilt free pick me up for basically around the clock.
I like to call them “palate cleansers” -although they are clearly not- cause I wanna munch on them after every single savory thing I put into my mouth. Good thing is you are kind of satisfied with one (each time) so you can control the calories (eternal struggle).
Super easy and super tasty and I’m just gonna grab one more before I write the recipe down.
1 plus 3/4 cup unsweetened shredded coconut
3 tablespoons coconut oil
3 tablespoons maple syrup (I used honey)
2 tablespoons unsweetened coconut milk
1/2 teaspoon vanilla extract
a pinch of salt
organic chocolate (the portion choice is yours!)
Blend all the ingredients besides the chocolate in a blender until it reaches a butter consistency. Take the batter and form balls, then put in the fridge (preferably overnight). Once the snowballs are firm, melt the chocolate and cover, dip them, make it rain. Sprinkle with shredded coconut if you like and let them in the fridge a bit more (this part is hard, I know).
Take them out and shove them in your mouth (works for me!)
